LOngmans Cheddar
Longmans Cheddar sits at the heart of our offering, a traditionally aged Cheddar range that spans the full spectrum from the gentle creaminess of Youngman to the stronger Matureman and the full‑bodied bite of Strongman and its XXX variant. All are made using milk from a herd of grass‑fed cows and matured by traditional methods — no bacteria are added to hurry the process, allowing depth, texture and the savoury complexity Cheddar lovers expect to develop naturally.
Longmans BUTTER
Alongside our cheddar, our butters complement the range: our Salted Whey‑Cream Butter — made from whey cream that retains living cultures and gently coloured by the carotene from grass‑fed cows — is produced with a careful extrusion that preserves quality and results in a butter that cooks slowly and tastes cleaner and, nutritionally, is a healthier alternative to standard butters; this salted butter won Gold at The 2026 British Cheese Awards. Our Unsalted Lactic Butter is cultured for a delicate, tangy lift and a lighter colour, perfect for baking or where a pure, buttery finish is required.
TWANGER
Green’s of Glastonbury Twanger is the farm’s most popular cheese — a rich, creamy, full‑fat cheddar made from pasteurised cow’s milk with vegetarian rennet and lovingly matured for up to two years. Loved by customers and chefs alike, Twanger delivers a wonderfully full, punchy Westcountry flavour with a smooth, creamy texture that makes it perfect for melting on toast, grating over dishes, elevating recipes from mac ’n’ cheese to MICHELIN Star creations, or serving on a cheeseboard.
TRADITIONAL & ORGANIC
Beyond the flagship Twanger, Green’s of Glastonbury offers a broad, traditional range that honours both conventional and organic cheesemaking. In the conventional line you’ll find classic unpasteurised Cheddar alongside a pasteurised Cheddar family available in Mild, Mature and Extra Mature ages, each expressing different levels of creaminess and tang. The range also includes quintessential West Country favourites — Double Gloucester and Red Leicester — as well as distinctive milks for variety and depth: Goat’s and Ewe’s milk cheeses, each bringing their own texture and flavour profiles.
Our organic selection mirrors this variety with pasteurised Cheddars in Mild, Mature and Extra Mature, plus organic Double Gloucester and Red Leicester; we also produce an organic smoked cheese for a richly aromatic, subtly charred finish. Together these styles provide something for every palate, from everyday sandwiches to bold cheeseboards.
Soft & Indulgent
Much like the gourmet town that inspired its name, Bruton Brie is the soft, indulgent centrepiece of the Longmans family. It’s our only soft cheese: an organic Brie crafted from rich Channel Island milk sourced from Guernsey herds at Olive Farm, Babcary and Chestblade Farm on the Mendips. That lush milk gives Bruton Brie its sumptuously creamy texture, a buttery, silky mouthfeel and a delicate, nuanced flavour that makes it perfect for sharing on a cheeseboard, melting into warm dishes, or simply enjoying with crusty bread and a glass of something bright.
Artisan Blue
Savour the bold, tangy flavours of Yarlington Blue Cheese, a true expression of artisanal craftsmanship passed down through generations.
Each wheel is patiently matured to develop a complex profile: an initial punch of salty, piquant blue mould gives way to creamy, mellow mid-notes that linger on the palate. Carefully infused with annatto, the cheese takes on a warm, golden hue and subtle caramel undertones that deepen its visual and flavour appeal. The texture is satisfyingly dense yet silky, offering a delicate crumble that releases bursts of savory richness and a faint, earthy finish. Perfect when crumbled over rustic salads, paired with sweet chutneys or ripe pears, or used as a standout ingredient in a dish.
Rich & SMOKEY
Our mild smoked cheddar, Smokeacre, is gently smoked over hot oak chips to develop a rich, savoury smoke character with deep, earthy undertones. Crafted from pasture-raised milk and patiently matured, it retains a firm, slightly crumbly texture and a balanced tang that the oak smoke enhances without overpowering. Ideal melted in gratins, gourmet cheese toasties, or served on a cheeseboard with chutney and dark ale.
